Organic Oats n Berries Crepe Recipe - Cooking with Amara Baby Food

Y'all know I am crazy about sneaking in fruits or vegetables in every day recipes whenever I can. It's especially easy to do by adding organic baby foods. I often worry if Kai is getting the right nutrients. I now find it easy to supplement with the Amara pouches or make these nutritious crepes ahead of time for a yummy organic baby meal! I used Amara Oats n Berries this time but can see myself adding new flavors like the Potato and Kale for a more savory flavor. These really make a great organic toddler snack the whole family can enjoy! Kevin and I ate at least 2 each. Must make again for our next brunch!

I love this recipe and modified it from our standard crepe recipe from here. The crepe batter is so simple because you most likely already have these ingredients on hand. 

Ingredients

  • 2 pouches of Amara Oats n Berries
  • 3/4 - almost 1 cup organic flour
  • 2 large organic eggs
  • 1/2 cup water
  • 1/2 cup organic milk
  • 2 tablespoons of melted grass-fed butter
  • 1/4 teaspoon of salt

Directions

  1. When measuring the Amara Oats n Berries and flour, use a 1 cup measuring cup, fill the bottom with 2 bags of organic baby food, then fill the rest to the brim with flour.
  2. In a large mixing bowl, mix together the flour-baby food mixture and eggs. Stir in water and milk slowly. It will seem "watery".
  3. Add melted butter and salt, then mix until no more clumps and smooth.
  4. Heat frying pan over medium heat with coconut oil. Add over 1/4 cup of batter to the pan. Rotate the pan slowly, in a circular motion to coat the bottom with even amounts of batter.
  5. Cook one side for 2 minutes and flip and cook the other side until golden. My FAVORITE crepe/omelet spatula can be found here. I literally use it for anything egg related. 

Topping

I wanted to add some fun colors and textures to these organic crepes so I made a yogurt mixture. Just simply cut up some fruits on hand and mix in. If I was indulging, I would replace it with freshly whipped creme, but let's save that for a cheat meal :)

After trying the yogurt mixture as a topping or on the side, I think I preferred it on the side. The slightly sweet yet complex taste of the Amara Oats n Berries really shines through on it's own. I cannot wait to make this recipe again!
