Healthy Eating Weeknight Meal Prep Spicy Shrimp Recipe

2019 is the year of habits for our family. Between the 2 of us, we are juggling 3 jobs, a million after school activities and a handful of out of town trips, and that’s just in Q1. Sometimes the easiest thing to do is to grab fast food, throw some nuggets on a plate for dinner and binge on Netflix. I think when we don’t intentionally decide to do something, we unintentionally decide to do the exact opposite. Same is true when it comes to healthy eating. I want to be more intentional with our meals and menus so we make our healthy eating habits a little easier and stress free! I’ve noticed when we stock our fridge with healthy options, our whole family is more likely to reach for it. For Kai, that means washing all her fruit ahead of time and cutting them up so she can easily grab ‘em. For the whole family, it means meal prepping ahead of time! I know, I know, meal prep is not so hard or boring when you have the right recipe! It doesn’t have to be complicated or intimidating. You can start small and just double the recipe so you can have lunches for the next day. Grilling is an easy way to make more proteins and sides without the extra effort.

INGREDIENTS

  • 20 Large Shrimp, peeled and deveined

  • Squash or Zucchini halved and sliced into 1/3 inch slices

  • Greek garlic dressing

  • Wooden skewers

  • Salt and Pepper

  • Cayenne pepper to taste

Instructions

  1. Pre-heat grill to medium

  2. Pat shrimp dry on a paper towel

  3. Using wooden skewer, thread 4 shrimps and 3 veggie pieces together.

  4. Season with cayenne pepper, salt and pepper mix. Then brush with Greek garlic dressing

  5. Grill on each side for 3-5 minutes or until it turns pink and cooked through
